Abstract
Biskuit kulit jeruk lemon merupakan salah satu produk pangan yang khususnya memanfaatkan limbah kulit lemon. Kulit jeruk lemon mengandung kandungan mineral seperti kalium, natrium, dan kalsium. Tujuan dari penelitian ini adalah untuk mengetahui kandungan zat gizi dan uji hedonik serta kandungan mineral pada biskuit kulit jeruk lemon. Penelitian ini merupakan penelitian eksperimen dengan penambahan kulit jeruk lemon bagian albedo dan flavedo. Analisis untuk kandungan mineral menggunakan Spektrofotometer Serapan Atom (SSA). Berdasarkan hasil penelitian kandungan mineral pada serbuk kulit jeruk lemon bagian albedo dan flavedo, bagian albedo, serta bagian flavedo berturut-turut sebesar 0,32%, 0,23%, 0,32% kalsium, 0,13%, 0,05%, 0,05% natrium, dan 0,65%, 0,53%, 0,6% kalium. Pada biskuit kulit lemon bagian albedo dan flavedo, bagian albedo, serta bagian flavedo berturut-turut sebesar 2,97%, 3,04%, 3,41% kalsium, 0,17%, 0,20 %, 0,25% natrium dan 0,23%, 0,19%, 0,22% kalium, sedangkan pada biskuit tanpa serbuk kulit lemon mengandung 0,058% kalsium, 0,097% natrium dan 0,118%. Serbuk kulit lemon terbukti dapat meningkatkan kandungan mineral pada biskuit. Kulit jeruk lemon bagian flavedo dapat dijadikan biskuit yang layak dikonsumsi sebagai makanan tambahan guna memenuhi kebutuhan mineral. Hasil analisis proksimat dan uji hedonik menunjukkan bahwa biskuit kulit jeruk lemon bagian flavedo memenuhi SNI 2973:1992 dan SNI 2973:2011 serta disukai oleh masyarakat. --- Lemon peel biscuit is one of food products that utilizes lemon peel waste. Lemon peel contains of minerals such as potassium, sodium, and calcium. The purpose of this study was to determine the nutritional contents and to test the hedonic and mineral content of lemon peel biscuit. This research is an experimental study of albedo and flavedo parts in lemon peel. The analysis of mineral content is using Atomic Absorption Spectrometer. Based on the results of reseach on the mineral content obtained from the powder of lemon peel of albedo and flavedo parts, albedo parts and flavedo parts respectively are 0,32%, 0,23%, 0,32% of calcium, 0,13%, 0,05%, 0,05% of sodium and 0,65%, 0,53%, 0,6% of potassium. Albedo and flavedo parts of lemon peel biscuit, albedo part and flavedo part respectively are 2,97%, 3,04%, 3,41% of calcium, 0,17%, 0,20%, 0,25% of sodium and 0,23%, 0,19%, 0,22% of potassium, while the biscuits without lemon peel powder contain 0,058% calcium, 0,097% sodium and 0,118%. Lemon peel powder has been shown to increase the mineral content of biscuits. Flavedo part of lemon peels can be used as biscuits that are suitable for consumption as additional food to meet nutritional and mineral needs. The results of the proximate analysis and hedonic test showed that the flavedo part of lemon peel biscuit fulfilled SNI 2973:1992 and SNI 2973: 2011 and was liked by public.
