Abstract

Penelitian ini bertujuan untuk menganalisis pengaruh perbedaan tempat ketinggian tempat tumbuh terhadap aktivitas antioksidan dari kulit buah kopi Arabika (Coffea arabica L.). Sampel yang digunakan kulit buah kopi Arabika dari Leles Kab.Garut 900-1300 mdpl) dan Daerah Ibun Kab.Bandung (1300-1700 mdpl). Pengujian aktivitas antioksidan menggunakan metode DPPH (1,1-Difenil-2-Pikrihidrazil) dan CUPRAC (Cupric Ion Reducing Antioxidant Capacity). Ekstraksi dilakukan bertingkat dengan tiga pelarut berbeda, yaitu etanol 96%, etil asetat, dan n-heksan secara sinambung menggunakan Soxhlet. Uji aktivitas antioksidan menggunakan spektrofotometer UV-Vis pada panjang gelombang 517 nm untuk metode DPPH dan 450 nm untuk metode CUPRAC. Berdasarkan analisis statistik, menunjukkan adanya perbedaan bermakna nilai IC50 DPPH dan EC50 CUPRAC dari ekstrak kulit buah kopi Leles dan Ibun. Dapat disimpulkan, adanya perbedaan tempat ketinggian tumbuh kopi Arabika dapat berpengaruh pada aktivitas antioksidan. Ekstrak kulit buah kopi Leles memiliki aktivitas antioksidan lebih berpotensi daripada kulit buah kopi dari Ibun. ------ This study aims to analyze the effect of different altitudes on the antioxidant activity of Arabica coffee (Coffea arabica L.) pulp. The samples used were Arabica coffee pulp from Leles, Garut Regency (900-1300 meters above sea level) and from Ibun, Bandung Regency (1300-1700 meters above sea level). The antioxidant activity was tested using the DPPH (1,1-Diphenyl-2-Picrylhydrazyl) and CUPRAC (Cupric Ion Reducing Antioxidant Capacity) methods. Extraction was performed in stages with three different solvents, namely 96% ethanol, ethyl acetate, and n-hexane, continuously using Soxhlet. The antioxidant activity was tested using a UV-Vis spectrophotometer at a wavelength of 517 nm for the DPPH method and 450 nm for the CUPRAC method. Statistical analysis showed a significant difference in the IC50 DPPH and EC50 CUPRAC values of the Leles and Ibun coffee pulp extracts. It can be concluded that the altitude at which Arabica coffee is grown can affect its antioxidant activity. The Leles coffee pulp extract had higher antioxidant activity than the Ibun coffee pulp extract.
