Abstract
Silase rumput gajah (Pennisetum purpureum) merupakan hijauan pakan tropis berpotensi tinggi, namun populasi bakteri asam laktat (BAL) epifitnya yang rendah membatasi keberhasilan fermentasi spontan. Penelitian ini bertujuan mengevaluasi pengaruh pengayaan daun kelor (Moringa oleifera) dan dosis inokulan Lactiplantibacillus plantarum terhadap mutu fisik, kimia, dan mikrobiologi silase rumput gajah pada fase akhir fermentasi. Metode yang digunakan adalah eksperimental laboratorium dengan analisis deskriptif-komparatif berpendekatan korelatif antarparameter, pada kombinasi proporsi rumput gajah:daun kelor 90%:10% (A1); 85%:15% (A2) dan dosis inokulan 0,3% (B1); 0,5% (B2); 1,0% (B3), serta kontrol negatif (A0B0). Kontrol menunjukkan mutu terendah dengan pH tinggi (7,70) dan populasi BAL rendah (5,04 log CFU/g). Pada A1, peningkatan dosis inokulan menurunkan pH (5,73–5,23) serta meningkatkan populasi BAL (7,16–8,32 log CFU/g) dan protein terlarut (7,878–15,967 ppm). Pola serupa namun lebih tajam terjadi pada A2, dengan pH 4,53–3,92, populasi BAL 7,36–9,22 log CFU/g, dan protein terlarut 9,012–16,684 ppm. Seluruh perlakuan aditif memenuhi standar fisik silase, sedangkan A2B3 memiliki tingkat degradasi yang terkendali (amonia-N 0,880 ppm). Secara keseluruhan, kombinasi A2B3 menghasilkan mutu silase terbaik berdasarkan korelasi seluruh parameter yang diuji. ------ Elephant grass (Pennisetum purpureum) silage is a high-potential tropical forage, but its low epiphytic lactic acid bacteria (LAB) population limits the success of spontaneous fermentation. This study aimed to evaluate the effect of moringa leaf (Moringa oleifera) enrichment and Lactiplantibacillus plantarum inoculant dosage on the physical, chemical, and microbiological quality of elephant grass silage at the final fermentation phase. The method used was laboratory experimental with descriptive-comparative analysis using a correlative approach among parameters, applied to combinations of elephant grass:moringa leaf proportions (90%:10% (A1); 85%:15% (A2)) and inoculant doses (0.3% (B1); 0.5% (B2); 1.0% (B3)), along with a negative control (A0B0). The control exhibited the lowest quality, with a high pH (7.70) and a low LAB population (5.04 log CFU/g). In A1, increasing the inoculant dose decreased the pH (5.73–5.23) and increased the LAB population (7.16–8.32 log CFU/g) and soluble protein content (7.878–15.967 ppm). A similar but more pronounced pattern occurred in A2, with pH values of 4.53–3.92, LAB populations of 7.36–9.22 log CFU/g, and soluble protein contents of 9.012–16.684 ppm. All additive treatments met the physical standards for silage, while A2B3 exhibited a controlled degradation level (ammonia-N of 0.880 ppm). Overall, the A2B3 combination produced the best silage quality based on the correlation of all tested parameters.
