Abstract
Keterbatasan ketersediaan pewarna alami dalam industri telah menyebabkan peningkatan penggunaan pewarna sintetis. Namun, pewarna sintetis menimbulkan keprihatinan terhadap keamanan. Antosianin, pigmen alami yang memberikan warna merah, ungu, atau biru pada tumbuhan, menjadi alternatif pewarna alami yang menarik perhatian. Penelitian ini bertujuan untuk mengidentifikasi tanaman berwarna ungu yang mengandung antosianin sebagai sumber pewarna alami. Metode time dependent extraction digunakan untuk pemisahan senyawa antosianin dari 20 daun ungu yang segar. Hasil penelitian menunjukkan variasi dalam bobot ekstrak dan rendemen antara berbagai jenis daun. Daun jawer kotok A menonjol dengan bobot ekstrak 23 mg dan rendemen 0,46%, lebih tinggi daripada jenis daun lainnya dengan waktu ekstraksi 50 detik. Analisis kualitatif antosianin menggunakan reagen HCL 2M dan NaOH 2M mengungkapkan perubahan warna menjadi merah dan hijau kebiruan setelah proses analisis. Uji kromatografi lapis tipis menunjukkan keberadaan antosianin, dan analisis menggunakan spektrofotometer UV-Visibel menghasilkan puncak spektrum pada panjang gelombang 544 nm, sesuai dengan literatur. Berdasarkan hasil penelitian, terindikasi bahwa daun jawer kotok A memiliki potensi sebagai sumber ekstrak antosianin yang menarik untuk dijadikan pewarna alami. Metode time dependent extraction terbukti efektif dan efisien dalam pemisahan senyawa antosianin. --- The limited availability of natural dyes in the industry has led to an increase in the use of synthetic dyes. However, synthetic dyes raise safety concerns. Anthocyanins, natural pigments that give plants their red, purple, or blue color, are an eyecatching alternative to natural dyes. This study aimed to identify purple plants containing anthocyanins as a source of natural dyes. The time dependent extraction method was used to separate anthocyanin compounds from 20 fresh purple leaves. The results showed variations in extract weights and yields between different leaf types. Jawer kotok A leaves stand out with an extract weight of 23 mg and a yield of 0.46%, higher than other leaf types with an extraction time of 50 seconds. Qualitative analysis of anthocyanins using 2M HCL and 2M NaOH reagent revealed a change in color to red and bluish green after the analysis process. Thin layer chromatography tests showing the presence of anthocyanins, and analysis using a UV-Visibel spectrophotometer produced spectral peaks at wavelengths of 544 nm, according to the literature. Based on the results of the study, it is indicated that jawer kotok A leaves have the potential as an interesting source of anthocyanin extract to be used as a natural dye. The time dependent extraction method has proven effective and efficient in the separation of anthocyanin compounds.
