Abstract

Berdasarkan ketebalan endocarp, kelapa sawit (Elaeis guineensis Jacq.) digolongkan menjadi tiga varietas yaitu Dura, Pisifera, dan Tenera. Ketiga varietas ini memiliki karakteristik yang berbeda–beda sehingga kadar CPO yang dihasilkan juga berbeda. Umumnya, minyak sawit mengandung 500–700 ppm senyawa karotenoid yang jumlahnya ekuivalen dengan 15 kali karotenoid pada wortel dan 300 kali karotenoid pada tomat. Tujuan dari artikel ini adalah membuat suatu kajian pustaka tentang komposisi karotenoid pada tiga varietas buah sawit serta metode–metode analisis karotenoid. Metode yang digunakan dalam artikel ini adalah berdasarkan kriteria inklusi dan eksklusi dalam pencarian literatur. Kriteria inklusi berupa hasil penelitian dengan menyatakan analisis komposisi karotenoid pada varietas sawit serta metode–metode analisis karotenoid pada CPO baik untuk kualitatif maupun kuantitatif. Kriteria eksklusi pada penelitian ini berdasarkan jurnal yang tidak membahas analisis karotenoid pada sawit, dan metode analisis karotenoid yang dilakukan pada limbah sawit. Berdasarkan hasil kajian didapatkan informasi bahwa pada tiga varietas sawit (Dura, Pisifera, dan Tenera) terdapat 11 jenis senyawa karotenoid dengan komposisi tertinggi adalah β-karoten pada rentang kadar 54,39–56,02%. Adapun metode analisis kuantitatif yang paling baik untuk memperoleh karotenoid dari CPO pada ulasan ini adalah HPLC sedangkan analisis kualitatifnya menggunkan UPLC. --- Based on the thickness of the endocarp, oil palm (Elaeis guineensis Jacq.) Is classified into three varieties, namely Dura, Pisifera, and Tenera. These three varieties have different characteristics so that the levels of CPO produced are also different. In general, palm oil contains 500–700 ppm of carotenoids, which is equivalent to 15 times the carotenoids in carrots and 300 times the carotenoids in tomatoes. The aim of this article is to make a literature review of the carotenoid composition of three varieties of oil palm fruit and methods of carotenoid analysis. The method used in this article is based on the inclusion and exclusion criteria in the literature search. The inclusion criteria were the results of the research by stating the analysis of the carotenoid composition of oil palm varieties and methods of carotenoid analysis on CPO, both qualitative and quantitative. The exclusion criteria in this study were based on journals that did not discuss carotenoid analysis in oil palm, and carotenoid analysis methods carried out on palm oil waste. Based on the results of the study, it was found that in three varieties of oil palm (Dura, Pisifera, and Tenera) there were 11 types of carotenoid compounds with the highest composition being β-carotene in the content range of 54.39–56.02%. The best quantitative analysis method for obtaining carotenoids from CPO in this review is HPLC, while the qualitative analysis uses UPLC.
