Abstract
Teh (Camellia sinensis L.) adalah salah satu bahan dasar minuman yang paling banyak dikonsumsi masyarakat diseluruh dunia. Manfaat yang dihasilkan dari minuman teh adalah memberi rasa segar, dapat memulihkan kesehatan tubuh dan terbukti tidak menimbulkan dampak negatif. Tujuan dari penelitian ini adalah untuk mengetahui ada tidaknya perbedaan kadar senyawa katekin pada teh hitam olahan PTPN VIII Rancabali dan mutu teh manakah yang memiliki katekin paling banyak, sampel dalam penelitian ini adalah teh hitam olahan orthodoks dan crushing tearing curling (CTC) dengan cara mengukur panjang gelombang masing-masing sampel menggunakan spektrofotometri UV-Vis dari tiap-tiap olahan teh tersebut. Hasil penelitian menunjukan terdapat perbedaan kandungan katekin dari setiap mutu teh, pada teh hitam orthodoks BOP sebesar 0,05175 mg/ml, BP sebesar 0,04367 mg/ml, BOPF sebesar 0,05821 mg/ml, PF sebesar 0,03329 mg/ml, BT sebesar 0,04913 mg/ml, DUST sebesar 0,05944 mg/ml, DUST III sebesar 0,04890 mg/ml, PW DUST sebesar 0,06175 mg/ml, F II sebesar 0,05052 mg/ml, BM sebesar 0,03360 mg/ml. pada teh hitam CTC BP I sebesar 0,04921 mg/ml, PF I sebesar 0,06313 mg/ml, PD sebesar 0,05829 mg/ml, DUST I sebesar 0,05090 mg/ml, FANN sebesar 0,05490 mg/ml , DUST II sebesar 0,05029 mg/ml, FGNS II sebesar0,04967 mg/ml. Katekin yang paling banyak dilihat dari nilai absorbansinya pada teh hitam olahan ortodoks PW DUST sebesar 0,06175 mg/ml memiliki nilai paling tinggi dan teh hitam olahan CTC yang memiliki nilai paling banyak adalah PF I sebesar 0,06313 mg/ml. --- Tea (Camellia sinensis L.) is one of the most widely consumed beverage ingredients worldwide. The benefits of drinking tea are that it gives a fresh taste, can restore body health and is proven to have no negative impact. The purpose of this study was to determine whether there were differences in the levels of catechin compounds in PTPN VIII Rancabali processed black tea and which tea quality had the most catechins. The samples in this study were orthodox processed black tea and crushing tearing curling (CTC) by measuring the length of the tea. waveform of each sample using UV-Vis spectrophotometry of each of the tea preparations. The results showed that there were differences in the catechin content of each tea quality, in orthodox black tea, BOP was 0.05175 mg/ml, BP was 0.04367 mg/ml, BOPF was 0.05821 mg/ml, PF was 0.03329 mg/ml. ml, BT of 0.04913 mg/ml, DUST of 0.05944 mg/ml, DUST III of 0.04890 mg/ml, PW of DUST of 0.06175 mg/ml, F II of 0.05052 mg/ml, BM is 0.03360 mg/ml. in black tea CTC BP I was 0.04921 mg/ml, PF I was 0.06313 mg/ml, PD was 0.05829 mg/ml, DUST I was 0.05090 mg/ml, FANN was 0.05490 mg/ml. ml, DUST II of 0.05029 mg/ml, FGNS II of 0.04967 mg/ml. The most widely seen catechins from the absorbance value in orthodox processed black tea PW DUST of 0.06175 mg/ml had the highest value and CTC processed black tea which had the highest value was PF I of 0.06313 mg/ml.
